Preparation
  1. Preheat oven to 350° F. Line an 8" X 8" baking dish with parchment paper with a 1" overhang on each side.
  2. Using a stand mixer (with paddle attachment) or hand mixer, on medium speed, beat mix with butter and water for 2–3 min or until a soft, uniform dough forms.
  3. Press dough into prepared dish. Place a piece of plastic wrap overtop; using your fingers or a small rolling pin, flatten and smooth top. It should be about 12" thick. Remove plastic wrap.
  4. Using a sharp knife, slice the dough into 18 rectangles. Using a fork or toothpick, dock shortbread (poke holes in it).
  5. Bake 55 min, or until top is golden brown and center is firm. Let cool in pan 5 min. While still hot, use a sharp knife to re-slice on lines as needed.  Sprinkle with sugar, if desired.
  6. Cool completely. Lift out using parchment overhang.
Tips

Instead of plastic wrap to help smooth out your dough, use a 14 Sheet Pan Liner. It will prevent any sticking, and it can be reused!
